Bubble tea is a popular Asian drink that is known for having little balls of chewy tapioca. This is a fun treat that adds a sensory experience to your typical drink/smoothie. There are many bubble tea shops around town, but once you start customizing your drink, it can get expensive! An alternative is buying just the pearls, or you can make your own! Here is a recipe on how to make homemade bubble tea pearls (and here is the original recipe):
Ingredients
- 1 cup of tapioca starch
- ¼ cup of brown sugar
- ⅓ cup of water
- ¼ teaspoon of black food colouring (optional)
Step 1
Pour the water and the brown sugar into a pan on medium heat. Next, mix the water and the sugar to combine them. Afterwards, add the black food dye.
Step 2
When the sugary water starts boiling, insert ½ of the tapioca starch and mix until it becomes a sticky goop. When it does, add the rest of the tapioca starch and mix. You don't have to mix it until all the flour is incorporated, that is what the next step is for.
Step 3
Place the dough on a clean surface and knead until it is smooth. If it's too dry, gradually add a little bit of water until the dough is moist enough.
Step 4
Roll the dough into logs and cut them in pieces small enough to fit through a large straw. Next roll those pieces into small balls.
Step 5
Boil water in a pot. When the water is boiling, add the tapioca balls and cook for 15 minutes. When it’s done, turn the heat off and let it rest for 5 minutes.
Step 6
Strain the pearls and let them cool.
Step 7
Add pearls to your favorite fruit or milk-based drink/smoothie. Voila! Homemade bubble tea pearls. If you don’t own straws that are large enough to suck up the pearls, you can use a spoon instead to scoop them from your cup. Now sit back, relax, and enjoy your bubbly drink!
